If you have ever seen a wedding cake then you know that those sumptuous
creations
of cake, filling and frosting are among the most difficult pastries
that a chef will ever be called upon to create. The wedding cake
is the centre piece of any wedding reception and must not only be
pleasing to see and taste but it must also last for several hours
in a warm reception hall. Naturally this criteria makes the cake
designer’s job somewhat of a stressful métier.
Cake designers generally begin planning the creation of a wedding
cake weeks in advance. Typically they have a
bevy of assistants who help them bring their vision to life. The
assistants help with the creation of the hundreds of sugar paste
flowers, birds, shells or ribbons that the cake will use or help
whip up the icing and batter. However, the designer is the one who
ultimately has to put everything together in that perfect way so
that when your guests walk into the reception hall they are left
speechless.
The cake designer’s job begins the moment he or she meets
with a client. Taking the wishes of the client the designer must
then come up with a design that will please the couple without being
repetitive. It is their job to ensure that each wedding cake is
unique and personalized to match the desires and characters of the
couple who order it. The actually cake making starts three to five
days before the wedding and continues up until the cake is to be
delivered. The stages involved include creating the decorations
ahead of time and freezing them, baking the different layers of
the cake, making the filling and frosting and then putting it all
together.
Once the cake designer’s job is done – you have only
to step back and admire their handiwork.
